Homemade Bread

1/2 cup water, 1/2 cup milk
1.5 tbsp oil
2 tbsp honey (or sugar)
2and7/8 cup bread flour
1 tbsp gluten (optional but i like it because the bread turns out better)
1.5 tsp salt
2and1/4 tsp yeast
1 fistful seasme seeds (I like the black ones because they look pretty)
1 firstful sunflower seeds (love the flavor)
couple tbsp poppy seeds (optional – you could just add more of whatever you like.
throw everything in the breadmaker. select basic cycle, enjoy!
It turns out beautifully. in the two years since i’ve had my breadmaker, I have bought store bought bread maybe 3 times…

Quickest Cake Ever!!!

The quickest cake ever !


200 gm Parle – G biscuits
2 tsp cocoa (add more if you like)
2 tsp chocolate powder
2 tsp sugar
Add walnuts
Mix all ingredients together
Then add 5gm eno and whisk properly
Put in a greased baking dish for 4 mins in microwave oven
Allow to cool
Can serve hot with vanilla icecream it use the cake to make your own sundae !

Quick Salmon Recipe

Salmon fillet (Use fresh if possible, if using frozen, thaw it completely)
Salt, pepper to taste
fresh cilantro
lemon slices
2 tsp olive oil
pinch of garam masala powder or fish masala (optional)
Aluminium foil
Take aluminium foil square (much bigger than the piece of salmon). Place the salmon on the foil. Sprinkle salt, pepper, masala (garam or fish masala) and fresh cut cilantro on both side. Add olive oil and keep the lemon slices on the salmon. Wrap the fish in the foil, making a nice pouch. You can add 2 layers of foil to keep it intact.
Keep enough water for boiling in a large pot. Slide the salmon pouch in the boiling water and let it remain in boiling water for about 7-10 mins (depending upon the size of salmon fillet). Remove and let it cool for 2-3 mins. The salmon will be ready to eat.
Nice thing is that the fish does not smell at this point, neither the house is filled with smell nor the utensils. I found this was easy way to cook and it tastes delicious.
To kick it up a notch, you can also add sauteed onion or bell-peppers  or mint leaves or any other seasoning of choice inside your pouch.

Aloo Masala Roti


2 boiled potatoes
1 grated onion
1/4 cup wheat flour
1/8 cup besan
Amchur powder
Salt to taste
Green chillies
Lots of coriander


Knead the dough with little curd and water if required
Make balls and then roll like a chapati
Cook on tawa and serve hot

Daal Dhokli (traditional gujarati one pot meal)

Part 1- making the dal
Ingredients for the Dal;
2 cups toovar dal (arhar)
2 tablespoons peanuts (cleaned of skin)
8 pieces cocum soaked
1 tomato chopped
3-4 tablespoons jaggery
1 tsp haldi, red chilli powder
1/2 tsp lemon juice
a little grated ginger, mustard seeds, curry leaves, whole jeera, methi seeds,2 cloves,a little hing, all  for tempering.
4 green chillies slit
salt to taste
Pressure cook the dal until cooked, cool and blend it smooth, then add 3 cups of water to the dal puree , no llumps no whole dal remaining.
Take some ghee, add mustard seed, upon crackling add jeera, curry leaves methi seeds, cloves, hing.
Add, tomato, jaggery, ginger, peanuts,turmeric powder lemon juice green chillies ,cocum and cook on low flame for 10 mins.
then add dal and salt and simmer for about 15 mins on low flame.
For Dhoklis:
1 cup whole wheat atta
1/2 tsp turmeric powder
1/2 tsp chili powder
1/2 tsp hing
2 tbl spoon oil
1/4 tsp ajwain seeds
Knead all the ingredients together and make a dough, should be firm.
divide the dough into 4 parts, roll out each into thin chapatis.
cut out diamond shapes about and inch and half out of each roti and while doing this, let the dal reach a boil.
Once the dal is boiling, add the dhoklis one by one giving it a few seconds between each time, or else they can gather in the dal and make a big lump.
once all dhoklis in, garnish with coriander and serve hot.

Baked Coriander Bread

Baked Coriander Bread
I have made this several times and each time its turned out just perfect with the guests asking for the recipe. I thought it the best recipe to start sharing with all the bigburp contributors.
The quantity remains according to ones taste.
Ingredients :
French Loaf (Plain or Cheese flavoured)
Garlic flakes
Green chillies
Salt and pepper
Grind the coriander, Garlic flakes and Green chillies in a nut grinder keeping it coarse…dont make a smooth paste. Heat Butter in pan and add the coriander mixture and saute it for few minutes. Add salt and pepper to taste keeping in mind the salt in the butter and the hotness in the chillies.
Cut the loaf in diagonal slices not to thin taking care not to cut till the end. Spread the coriander mixture in between the slices. Preheat the oven at 180 C.Wrap the bread in a foil and bake it for 15-20 minutes. Serve hot with soup.
Variation: U can use the mixture on mini toast topped with cheese and serve as starters.

Tawa Pulao

3 cups of cooked rice
2 tbsp Oil
1/2 tsp cumin seeds
1 medium onion ( chopped)
1/2 tsp. ginger paste
1/2 tsp. garlic paste
4 medium tomatoes ( chopped)
1/2 cup Green peas ( boiled and crushed)
1 medium carrot ( boiled and diced)
2 tsps Pav Bhaji masala
1 tbsp Red chilli paste ( I used Siracha )
1 Small Bell pepper ( finely Chopped)
2 tbsp. coriander leaves
2 tbsp. lemon juice
Heat oil in the pan , add cumin seeds saute them till they turn brown, add onion and then ginger-garlic paste.  Once the onion turns translucent add tomatoes , crushed peas & carrots. After a while add Pav Bhaji Masala,  Hot sauce and around 2 Tbsp. of water and mix it all and then add cooked rice and salt to taste.  Finally add finely chopped Bell pepper, corainder leaves and lemon juice and cook it on high flame for another minute or two. Your Tawa Pulav is ready to serve.
