Summer Fruit Tart

Here is the easy way to make a fruit tart, I had originally found this recipe on the net and tried it with a pie crust which turned out very good …
I always thought using puff pastry would make the base soggy , last week due  to shortage  of time I has to use the puff pastry and it turned out rather very nice and the tart stayed quite crisp even after couple of hours…. It is a great dessert for summer and very  easy to make….

Ingredients
One puff pastry sheet thawed
Assorted fruits cut to same size
4 ounces of mascarpone  cheese (unsweetened. if you use sweetened cheese then omit step no 2)
2 teaspoons of vanilla extract
1/4 cup of sugar

For the glaze
Half cup of orange juice/mango juice
1/4 cup of sugar
2 teaspoons of cornstarch and couple of drops of lemon juice or zest…

Method:
1) Lay the pastry sheet on a parchment paper, elongate the sheet with a rolling pin so its a nice big square and pierce the puff pastry with a fork all over.
Bake the puff pastry sheet in the oven at 400°F on a sheet of parchment paper for about 20 mins or until golden brown ,  remove and let it cool completely.

2) Mix the cheese sugar and vanilla extract and beat until smooth.

3) Spread the cheese mix on the puff pastry evenly of about 1/4 inch thick layer
Arrange the fruits in a neat pattern on the cheese. Chill the tart with the fruit in the refrigerator while you prepare the glaze.

4) In a sauce pan add sugar, orange juice and cornstarch and bring it to a boil,
Once it comes to a boil and starts to thicken lower the heat and let it simmer until the glaze is nice and thick and transparent, remove and let it cool. add the lemon drops or the zest.

With a brush spread the glaze on the fruit tart and chill for 30 minutes.

Khava Narial Vadi (for coconut lovers)

Recipe:
  • Grated frozen coconut, sugar and khoya in 1:1:1 combination
  • Mix khoya and coconut well.
  • Heat some ghee in a pan and add the mix in it and cook it well by continuous frying.
  • Add Sugar to it and again cook it for another 10mins.
  • When the mix becomes paste, add ilaichi powder to it and mix well.
  • Now spread the mix on a big round greased plate.
  • Wait for 5-10mins and make cross lines on the spread with the help of knife.
  • Wait till it starts leaving the plate.. separate it from the plate with the help of knife or flat spoon.
  • Vadi’s will get separated from each other. Keep it in air tight box.

Fruity Trifle Pudding

This is a very simple summer dessert and easy to put together, actually semi-home made too. I have made this several times and each time it turns out great and guests love it specially kids!

Ingredients:

The quantity of the ingredients depends on the size of your bowl so have some extra.

2 cups of melted  ice cream any flavor you like ( i usually go with vanilla since it blends well with any fruit)

2 cups of tea biscuit crumbs ( marie, plain good-day, vanilla thins, nilla’s, any cookie that crumbs well and is not too sweet)

1 cup of orange or pineapple juice

2 cups of fresh fruit ( pineapple,mangoes and mandarin oranges goes the best)

2 cups of cake crumbs ( this is in a way optional but if you have leftover cake or can get a pound cake loaf then break into crumbs, the cake adds the body and it tastes really good)

If you are not using cake crumbs then double your cookie crumbs.

Method:

In a deep bowl, start layering the ingredients.

First: 

Spread a ladle of melted ice cream on the bottom.

then spread the cookie crumbs. 

then sprinkle the juice generously so the crumbs are wet.

top it with fresh fruits, then cake crumbs and then spread the melted ice cream, again generously so the cake crumbs are wet.

REPEAT THE PROCESS UNTIL THE BOWL IS FULL.

The last layer should be the melted ice cream.

Set it in the refrigerator for a few hours before serving.

Scoop out the servings and you can put fat free cool whip on top.

Badami Besan Ladoo

1/3 cup unsalted butter or ghee

 1 cup  ladoo besan    

 1/3 cup sugar 

 1/3 cup chopped almonds       

Elachi powder per taste 

Roast the besan with elachi in melted butter. Turn off the gas when it turns brown.

Allow it to cool for 10 mins. Then add sugar and almonds (if making the  badami besan ladoo). Mix well.  

 Let it cool down completely and then make ladoos.

Pineapple Cream

A Simple 5 mints Dessert recipe i tried over the weekend

Ingredients:

2 cups of fresh Pineapple chopped or canned Pineapple in Pineapple juice.

1cup light sour cream

1 cup light whipped cream

2 tsp sugar

Method

Mix every thing together and serve chilled…

Kids love it and is on the lighter side using light cream..

Mishti Doi (Traditional Bengali Sweet Yogurt)

Ingredients

1 can of condensed Milk,
1 cup of Evaporated Milk,
1 cup of Greek Yogurt.

Method:

Mix the above ingredients and  beat with a hand mixer or in the blender till nice and frothy. Pour in a baking dish.

Use a little less than 1 can of condensed milk if you don’t like it very sweet.

Also if you do not have greek yogurt you can use regular full fat plain yogurt but do strain out the whey.

Heat Oven to 350 F. Fill a large baking tray with water. Put the baking dish with the mix in it so that water is half way up. Do not cover the baking dish.

After 30 – 35 minutes the yogurt will be set,
if not allow a couple more minutes. Take it out and chill in the refrigerator for 2-3 hours.

Garnish with saffron strands and serve.  You can also garnish with crushed pistachios.

Twisted Healthier Whoopie Pie

 

 

 

 

 

Ingredients :

Two pieces large size Voortman’s omega 3-flax seed cookies (oh yeah! those 🙂 u get them readily in the grocery stores and they are very tasty, nothing like the name suggests, infact they taste just like oatmeal cookies)

 

If you don’t find these cookies, scout in the aisle for voortman’s other cookies or look for cookies with less fat.

1 large dollop of frozen yogurt (any flavor you like: berries,lemon,vanilla or chocolate)

Sprinkles (whatever your heart wants, i have used chocolate)

A spoonful of any kind of sauce to drizzle over- Optional ( strawberry,raspberry, hershey’s syrup)

METHOD:

Take the dollop of frozen yogurt and place between the two cookies.

 

Work quick.

Roll the sandwich in a plate of sprinkles and drizzle a thin line of sauce.

Refrigerate immediately if you are eating later or serve.

The original whoppie pies have cake like cookies and  cream between them.

Using frozen yogurt cuts the calories and fat in half and also the flax seed a

nd omega 3 add some nutrition to the cookies.
